In my opinion, nothing tastes better in the summer than fresh peaches and this delicious light peach cobbler.
After you try this recipe I think you will agree. Especially when it is served with a dollop of light ice cream on top of the warm cobbler!
This recipe is quite easy and it could not taste better.
I have taken the original old fashion cobbler recipe that my grandmother made, and lightened it up without taking away all the yummy goodness.
To start pre-heat the oven to 375 degrees. Peel 7 medium ripe peaches and put them in a medium sauce pan. Add 3 tablespoons of the sugar blend, 1½ tablespoon cornstarch, 1½ teaspoon of lemon juice, 1teaspoon cinnamon. Mix until peaches are well coated then cook over medium heat until thickened, about 2 minutes. Remove from heat and transfer into an 8×8 baking dish that has been sprayed with cooking spray (either vegetable oil or olive oil).
In a medium mixing bowl combine: 11/4 cup wheat flour, 1teaspoon sugar mix, 1½ teaspoon baking powder and a pinch of salt. Cut the 4 tablespoons of light cold butter into small pieces. With a fork mix the butter into the flour mixture until it resembles pea size pieces. Mix in 2/3 cup fat free milk. Drop heaping teaspoons of the mixture over the peach mixture in the baking dish. Sprinkle top with raw sugar. Bake approximately 20-22 minutes or until golden brown. Then get out the ice cream and serve the cobbler warm with the ice cream on top.

3 tablespoons plus 1teaspoon Raw Sugar and Steva blend (Whole Earth makes one and there are others)
1teaspoon raw sugar (you can use regular sugar)
1 ½ tablespoon cornstarch
1 ½ teaspoon lemon juice
1 teaspoon cinnamon
1 1/4 cup wheat flour
1 ½ teaspoon baking powder
Pinch of salt
4 tablespoons cold light butter
2/3 c fat free milk
