This Refreshing Watermelon & Cucumber Salad is a surprising summer treat! Watermelon is one of my favorite things about summer. How about you? It seems I can never get enough. In addition to eating it by itself I like to use it in salads for a delicious light touch. Combining it with the cucumber may seem like an odd pairing, but the flavors are a great compliment to each other.
One salad I often make in the summer is a refreshing watermelon- cucumber salad with tomatoes, goat cheese and basil. Blueberries or pretty much any other fresh fruit could be added.
In a large bowl start with bite size watermelon pieces. Add to that chopped cucumber. Fresh tomatoes of any sort can also be chopped into small pieces and included. I like the orange tomatoes because they have less acid. Chiffonade fresh basil, which is just a fancy way of saying roll-up a stack of basil and slice it into thin ribbons. Including fresh basil is a great way to give an additional burst of flavor. Crumble feta cheese or goat cheese and add to the bowl. Fresh mozzarella cheese would work well too.
For the dressing drizzle in olive oil and a balsamic vinegar. I have a fig balsamic which is just perfect for this dish. Don’t be afraid to use a flavored vinegar in this salad. Finish off with a sprinkle of coarse sea salt. This amazing fresh salad is so yummy is sure to be a favorite!
4 cups of watermelon pieces
2 cups of peeled and chopped cucumber
1 cups chopped tomatoes
Goat Cheese Crumbles (honey goat cheese works well, or you can substitute feta cheese)
1 handful of sliced fresh basil leaves
Olive oil, balsamic vinegar, sea salt to taste
Mix all ingredients and enjoy!
Summers in Michigan are exquisite, especially when we can be at the cottage in Pentwater on the Lake Michigan coast. But the season doesn’t last as long as I would like it to. So, I make this refreshing watermelon & cucumber salad as often as possible during the summer months to get my watermelon fix while I can. And surprisingly I never get tired of it.
