There are so many zucchini bread recipes out there and believe me I have tried many of them. From my multitude of baking experiences, I have taken what I have learned and added a little healthy to it to make a healthier delicious pineapple zucchini bread.
This recipe is pretty simple, even with making it healthier, and it is so delicious it is well worth making. Two ways I have made it healthier are by changing out the white sugar for a raw sugar and stevia blend. And instead of white flour I use sprouted wheat flour. Both of those items you should be able to find at the grocery store.
Here is the recipe:
Pre-heat oven to 325 degrees
In a large mixing bowl whisk 1 egg and 1 egg white
½ cup canola oil (or vegetable oil)
½ cup raw sugar/ stevia blend (for a not as healthy version you can use 1c sugar)
1- 8ounce can crushed pineapple in pineapple juice. Squeeze out as much of the liquid as possible
1 ½ cups of grated zucchini. Squeeze out as much of the liquid in the zucchini as possible
1 ½ cups of sprouted wheat flour (you can use regular wheat flour)
1 tsp cinnamon
1 tsp baking soda
¼ tsp baking powder
Pinch of salt
1 ½ tsp vanilla
½ c chopped walnuts (optional)
Stir until just mixed. Spray 9”x5” loaf pan with cooking spray. Spread batter into pan. It will be on the thick side. Bake for 1hour 15 minutes or until toothpick inserted in the center comes out clean.
Cool in the pan. Run a knife around the edge of the pan. Flip onto a plate, slice and enjoy! I hope you will love this yummy bread as much as I do and it will be your go to zucchini bread recipe for years to come.
